$300 Cheesecake
When I tried to make this cheesecake with a hand mixer, it burned out the motor. Â We ended up going to Costco to buy a new one AND a stand mixer so that we could make the cheesecake. Â Since then, this has been know at my house as “$300 Cheesecake.”
Crust:
Ingredients:
- 1 cup flour
- 1/4 teaspoon sugar
- 1 teaspoon grated lemon rind
- 1/4 pound butter
- 1 egg yolk, lightly beaten
- 1/4 teaspoon vanilla extract
Preparation:
Preheat the oven to 400 degrees Fahrenheit. Â Combine the flour, sugar, and lemon rind. Â Cut in butter until the mixture is crumbly. Â Add egg yolk and vanilla. Â Mix. Â Pat one-third of the dough over the bottom of a 9-inch springform pan with sides removed. Â Bake for about 6 minutes, or until golden. Â Cool. Â Butter the sides of the pan and attach to the bottom. Â Pat remaining dough around the sides to a height of 2 inches.
Filling:
Ingredients:
- 2 1/2 pounds cream cheese
- 1/4 teaspoon vanilla extract
- 1 teaspoon grated lemon rind
- 1 3/4 cups sugar
- 3 Tablespoons all-purpose flour
- Pinch of salt
- 5 eggs
- 2 egg yolks
- 1/4 cup cream
Preparation
Preheat the oven to 475 degrees Fahrenheit. Â Beat the cream cheese until fluffy. Â Add vanilla and lemon rind. Â Combine the sugar, flour, and salt. Â Gradually blend into cheese mixture. Â Beat in eggs and egg yolks, one at a time. Â Add the cream and beat well. Â Pour mixture into the prepared crust.
Bake for 8-10 minutes, then reduce the heat to 200 degrees Fahrenheit. Â Bake for 1 1/2 hours longer, or until set. Â Turn off heat. Â Allow the cheesecake to remain in the oven with the door ajar for 30 minutes. Cool on a rack, then chill in the refrigerator.
Glaze:
Ingredients:
- 1/3 cup sugar
- 1 quart strawberries
- 1/4 cup water
- 1 tablespoon cornstarch
- 1 teaspoon butter
Preparation:
Wash and hull the strawberries. Â Crush enough berries to make 1/2 cup. Â Boil the crushed berries, sugar, water, and cornstarch 2 minutes, stirring. Â Add the butter. Â Strain and cool. Â Arrange the remaining whole berries over the top of the cheesecake and pour the glaze over the berries. Â Chill.

I love a good cooked cheesecake. The no-bake ones just don’t even compare.
If this burned out your hand mixer and my hand mixer IS my hand and a spoon . . . Maybe I won’t be making this for awhile.
I did decide, randomly, the other day, that if I buy a house on my own, my housewarming gift to me will be a stand mixer. Actually, this may or may not be random since it was considered after helping my brother make peppermint cheesecake with our mother’s Kitchen-Aid and marveling at how much faster it is when things stir themselves.
